Description
The vineyards are located near Villarrobledo on limestone and clay soils and the grapes are mainly picked by hand. Extra ripe grapes and small yields generated a high quality level for this vintage. Rojo Mojo is a wine that is as bold and attractive in the bottle as it is on the outside! It is jam packed with red and black fruit aromas and flavours and there are also hints of spice.
Winemaking
The vineyards are located at the heart of the massive La Mancha area, near to Villarrobledo. In the winery, the grapes underwent two to three days of cold pre-fermentation maceration to enhance colour and flavour extraction. The must was then inoculated with selected yeasts and fermented at 28°C with four daily pumpovers. Post-fermentation maceration lasted 20 to 30 days, depending on the development of the individual lots, to achieve the fullest extraction and body. The wine was then drawn off the skins and seeds, and the free-run wine was separated from the press wine. Rojo Mojo is all about fruit and so there was no oak ageing.
