Description
El Burro Shiraz will keep for between 5 and 7 years, but to be honest it is so good now that you will not be able to resist it for that long! The colour is a deep purple red with hints of violet. There are outstanding aromas of red fruits which keep on developing in glass with additional floral nuances. Smooth and full bodied on palate with subtle tannins, just enough to give it the required structure to accompany food and keep for a few years. Nice acidity on the finish means this is a long and satisfying red wine full of character. Most tapas will be enhanced by a glass of El Burro Shiraz, especially meats such as cured ham.
Winemaking
High in the pine forested hills above the small town of Bullas, the 10 year old vines are planted in dry vineyards with sandy clay soils. The climate is unique for southern Spain as the altitude ensures cooler temperatures than might be expected, providing for a long, steady ripening process. As usual, the weather during harvest (mid to end September) was dry and ideal for bringing in healthy grapes. Harvested by hand. Fermentation was in large tanks for 16 days at a temperature between 24 and 28 degrees. The wine sees no oak and matures in tank.
