TASTING NOTES

Colour: Vivid purple with a bright red rim
Nose: Bursting with raspberry, cherry and violet aromas and complex earthy notes of spice with a touch of leather, vanilla and mocha
Palate: Medium to full-bodied with fine, soft tannins, well balanced acidity and well-integrated oak flavours. Raspberry and wild berry fruits give way to a long, smooth, spicy finish.

FOOD MATCH

Excellent with all red meats, game, rich casseroles or pasta dishes.

VITICULTURE / VINIFICATION

For us, Garnacha is one of Spain’s finest grape varieties, producing ravishingly fruity wines with a wonderful spicy character. This is especially true when it’s old vine Garnacha like this blockbuster made by top producer Bodegas Aylés, based in Aragón.

Harvesting took place in early October when the grapes had reached optimum ripeness. The grapes were machine harvested from 15 year-old vines grown on calcareous clay soils. They were then de-stemmed and semi-crushed before a prefermentative maceration at low, controlled temperatures of 8-10ºC for four days. The wine was then fermented in temperature controlled stainless steel tanks. 50% of the wine spent four months in high quality oak barrels to add a vanilla smoothness and a toasty, spicy touch to the flavours.

Colour: Pale gold with youthful green hues
Nose: Fresh and zesty with pronounced lemon and tropical fruit aromas and flinty notes
Palate: Bright, lively and bursting with citrus and tropical fruit flavours along with a hint of fennel. Further toasty and mineral characteristics are added through lees ageing. Well structured with crisp acidity and a long, refreshing finish

Perfect served chilled as an aperitif or as a parter to seafood, pasta and white meat dishes.

VITICULTURE / VINIFICATION

This is a classic, zesty white wine from La Mancha in central Spain. Regular continental Mediterranean climate, with warm summers, cold winters and a low rainfall, above limestone-clay grounds enriches the soil and environmental conditions that fosters the production of exceptional grape vines and plants used to produce quality wines.

Our vineyards are located in a privileged situation, with an altitude that exceeds 735 meters above sea level, in the Gigüela’s river banks, which crosses our beloved village. The area’s soil is very specific of our location. It ranges from sandy-loam soils to straight ones, which have a clear limestone cut, not very deep and poor in organic matter. The grapes are harvested at night. In this way the temperature is cooler, which prevents the fermentation starts before arriving the winery.

The winemaker has gone for a fresh, unoaked style, with fermentation taking place in stainless steel tanks at a cool, controlled temperature of 15ºC to preserve pure fruit flavours. Further character is added through battonage, during which the wine is stirred on the fine lees.
